Rub Number 2

A rub is mixture of ground spices that is made for the purpose of being rubbed on raw food before the food is cooked. Rubs are mainly used for preparing meats and fish. Different cultures have different versions of rubs and call them by different names. In the U.S., rubs are usually found on barbecued food.

This rub can be used anywhere you might use a rub. This recipe doesn't produce a large quantity, so you may want to double it.

Ingredients

¼ cup (4 Tablespoons) brown sugar
¼ cup (4 Tablespoons) salt
¼ cup (4 Tablespoons) ground black pepper
3 Tablespoons granulated garlic
3 Tablespoons paprika (sweet, not hot)
1 Tablespoon ground cumin
1 teaspoon dry mustard
½ teaspoon cayenne pepper
 

Method:

Combine all the ingredients in a seal-able air tight container. The rub can be used on pork ribs or combined with melted butter and used to baste poultry. You can also put this in a shaker and use it as a condiment to sprinkle on just about anything, your morning eggs, home fried potatoes, or steaks.
