Cauliflower is one of those vegetables that are good for you, low carbohydrate, but not too many people like it. This recipe combines a tangy mustard sauce and cheese to coat the cauliflower and make it quite tasty. My daughter really loves it this way.
Bring a couple inches of salted water to a boil in a covered saucepan large enough to hold the head of cauliflower.
Preheat your oven to 350° F.
Prepare the cauliflower by cutting off any green leaves and trimming the bottom of the stem.
Rinse the cauliflower well, then cook it in simmering water for 12 minutes. Carefully remove it from the pan and drain well in a collander.
In a small bowl, combine mayonnaise, mustard and minced onion. Spread mixture over cauliflower. Sprinkle with shredded cheese, covering well.
Bake in 350° F oven about 5 minutes, until the cheese melts and just starts to brown.
Serve hot.
