Craig's Pressure Cooker Cranberry Sauce

This is an easy recipe for Cranberry Sauce made with a little orange flavoring. I don't make it very sweet. My wife and I like it this way. Feel free to double the sugar in the recipe if you want.

I make this for Thanksgiving.

Ingredients

12 ounces fresh cranberries
The peeled zest of one orange (peeled with vegetable peeler)
¼ cup orange juice
⅛ teaspoon table salt
¼ cup white sugar

Instructions

  1. Wash your cranberries in a colander.
  2. Put cranberries, orange zest, and orange juice in pressure cooker. Cook at high pressure for 1 minute, then Natural release for at least 7 minutes, then quick release.
  3. Remove orange zest strips and discard.
  4. Add salt and sugar to pressure cooker pot, stirring well.
  5. Mash up whole berries with bamboo (or wooden) spoon.
  6. Use the Sauté setting to bring up to a simmer and reduce for 5 or 10 minutes.

Notes:

  1. Sauce may be served warm or cold.
