Dutch Baby (Big Apple Pancake)
My wife really likes this as a breakfast food, but it can be eaten at any time. It is pretty easy to make, and not too sweet.
Ingredients
- ½ stick (¼ cup) butter
- ½ cup whole milk
- ½ cup all-purpose flour
- 4 large eggs
- 3 Tablespoons granulated sugar
- ½ teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt

- 1 large apple, peeled cored and cut into ¼ inch wedges/slices
- Confectioners' sugar for dusting
Preparation
- Put oven rack in middle position.
- Melt butter in a well seasoned skillet or non-stick oven-proof pan over moderate heat, coating skillet.
- While butter is melting, add milk, flour, eggs, granulated sugar, vanilla, cinnamon, and salt to blender.
- Pour melted butter into blender and blend all ingredients until smooth.
- Add apple wedges to skillet and cook, turning over once, until browned on both sides, 3 to 5 minutes.
- Pour batter over apple and transfer skillet to oven. Do not preheat oven. Bake at 450°F until pancake is puffed and golden, about 15 minutes.
- To serve, flip out of pan so bottom side is up, apples showing. Cut into serving sized pieces. Dust with confectioners' sugar and serve immediately.
