Dutch Baby (Big Apple Pancake)

My wife really likes this as a breakfast food, but it can be eaten at any time. It is pretty easy to make, and not too sweet.


Ingredients

½ stick (¼ cup) butter
½ cup whole milk
½ cup all-purpose flour
4 large eggs
3 Tablespoons granulated sugar
½ teaspoon vanilla
½ teaspoon cinnamon
¼ teaspoon salt
1 large apple, peeled cored and cut into ¼ inch wedges/slices
Confectioners' sugar for dusting

Preparation

  1. Put oven rack in middle position.
  2. Melt butter in a well seasoned skillet or non-stick oven-proof pan over moderate heat, coating skillet.
  3. While butter is melting, add milk, flour, eggs, granulated sugar, vanilla, cinnamon, and salt to blender.
  4. Pour melted butter into blender and blend all ingredients until smooth.
  5. Add apple wedges to skillet and cook, turning over once, until browned on both sides, 3 to 5 minutes.
  6. Pour batter over apple and transfer skillet to oven. Do not preheat oven. Bake at 450°F until pancake is puffed and golden, about 15 minutes.
  7. To serve, flip out of pan so bottom side is up, apples showing. Cut into serving sized pieces. Dust with confectioners' sugar and serve immediately.
