This recipe, for fried rice, originally came from one of my Weber Grill cook books, that came with one of my grills (Weber has a wok attachment for their kettle grills). I've made very few modifications to it, and I really like it. It has enough vegetables, meat and eggs to be a meal in itself. It does make quite a lot though.
I use a wok for to make this, but if you don't have a wok, then a very large pan or pot will work.

Heat wok. Pour oil into wok and brush the oil up the sides of the wok. Place the bacon in the wok and stir-fry for several minutes until the bacon is lightly browned. Add ham and stir-fry one minute. Add all vegetables, sugar and pepper, stir-fry about four minutes. Push everything up the sides making a well in the center for the eggs. Pour the eggs into the center and cook until they are set, stirring gently. Add rice and mix everything together well, stir-fry three minutes. Add soy sauce and stir-fry two to three minutes.
Any cooked meat, fish or fowl, or raw shrimp or scallops may be substituted for the ham.
