Fried Rice

This recipe, for fried rice, originally came from one of my Weber Grill cook books, that came with one of my grills (Weber has a wok attachment for their kettle grills). I've made very few modifications to it, and I really like it. It has enough vegetables, meat and eggs to be a meal in itself. It does make quite a lot though, about 16 servings.

Ingredients

8 cups cooked rice
2 ounces peanut oil
½ pound bacon -- diced
½ pound ham -- diced
1½ cups fresh bean sprouts, or half a cabbage, shredded
1 large onion -- chopped
1 small green pepper -- chopped
1 teaspoon sugar
¼ teaspoon black pepper
4 eggs -- lightly beaten
2 ounces soy sauce

Preparing the Dish

Heat wok. Pour oil into wok and brush the oil up the sides of the wok. Place the bacon in the wok and stir-fry for several minutes until the bacon is lightly browned. Add ham and stir-fry one minute. Add all vegetables, sugar and pepper, stir-fry about four minutes. Push everything up the sides making a well in the center for the eggs. Pour the eggs into the center and cook until they are set, stirring gently. Add rice and mix everything together well, stir-fry three minutes. Add soy sauce and stir-fry two to three minutes.

NOTES :

Any cooked meat, fish or fowl, or raw shrimp or scallops may be substituted for the ham.
