This recipe uses two whole oranges including the rind. Using the orange rind gives it a really nice flavor.
Preheat your oven to 350°F.
I wash my oranges, then cut them into 8ths, removing the seeds and then pulse them in my food processor until they are ground up well. You could grind them in a meat grinder, or chop them up with a knife then run them through your blender. If you are really good with a knife, then mince them finely by hand.
In a large bowl whisk the baking soda into the buttermilk.
Fold in all other ingredients.
Butter and flour a 9 inch square baking pan, then add the batter to the pan.
Bake about 45 minutes.
Remove; allow to cool on a wire rack, and frost.
