Craig's Fluffy Pancakes

This is my own recipe for pancakes. This recipe makes nice light, and quite fluffy pancakes.

¾ cup milk or half-and-half
2 Tablespoons vinegar
1 cup all-purpose flour
2 Tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
1 Tablespoon butter, melted

Preparing the Cakes

  1. In a two cup measure, combine milk with vinegar then set aside to allow the milk to curdle.
  2. Combine the dry ingredients, flour, sugar, baking powder, baking soda, and salt, in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the wet ingredients into the flour mixture and whisk until lumps are gone.
  3. For the fluffiest pancakes, allow the batter to rest for 30 minutes.
  4. Heat a large skillet over medium heat, and coat with cooking spray. Ideal griddle temperature is 375°F to 390°F. Pour ¼ cup portions of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side

I like these with just a little butter on them, but they can be topped with pancake syrup, maple syrup, honey, jam, peanut butter, ketchup, or whatever you like. When I was a kid, I used to like sausage grease poured on my pancakes.
