Craig's Fluffy Pancakes

This is my own recipe for pancakes. This recipe makes nice light, and quite fluffy pancakes.

¾ cup milk or half-and-half
2 Tablespoons vinegar
1 cup all-purpose flour
2 Tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
1 Tablespoon butter, melted

Preparing the Cakes

  1. In a two cup measure, combine milk with vinegar then set aside to allow the milk to curdle.
  2. Whisk the dry ingredients, flour, sugar, baking powder, baking soda, and salt, together in a large mixing bowl. Whisk the egg and butter into the milk mixture. Pour the wet ingredients into the dry ingredients and whisk until the lumps are gone.
  3. For the fluffiest pancakes, allow the batter to rest for 30 minutes.
  4. Heat a large skillet over medium heat, and coat with cooking spray. Pour ¼ cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, and the edges get dull (not wet and shiny looking). Flip with a spatula, and cook until browned on the other side, about three more minutes.

I like these with just a little butter on them, but they can be topped with pancake syrup, maple syrup, honey, jam, peanut butter, ketchup, or whatever you like. When I was a kid, I used to like sausage grease poured on my pancakes.
