Craig's Fluffy Pancakes

This is my own recipe for pancakes. This recipe makes nice light, and quite fluffy pancakes.

Ingredients

¾ cup half-and-half
2 Tablespoons vinegar
1 cup self-rising flour
2 Tablespoons white sugar
1 teaspoon baking soda
½ teaspoon salt
1 egg
1 Tablespoon butter, melted

Preparing the Cakes

  1. In a two cup measure, combine half-and-half with vinegar then set aside to allow to curdle.
  2. Combine the dry ingredients, flour, sugar, baking soda, and salt, in a large mixing bowl.
  3. Whisk egg and butter into half-and-half vinegar mixture. Pour the wet ingredients into the flour mixture and whisk until mixture is smooth.
  4. Heat a large skillet or non-stick pan over medium heat, and coat with cooking spray. Ideal skillet temperature is from 375°F to 390°F. Pour ¼ cup portions of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until golden on both sides.

I like these with just a little butter on them, but they can be topped with pancake syrup, maple syrup, honey, jam, peanut butter, ketchup, or whatever you like. When I was a kid, I used to like sausage grease poured on my pancakes.
