Zucchini Mescolanza

This is a very easy, but tasty, Italian dish, and a way to use some of that zucchini you have in your garden.

Zuccchini Mescolanza


½ pound ground beef (hamburger)
1 cup chopped onion
1 clove garlic -- crushed
3 cups sliced zucchini
30 oz Marinara sauce
1 can ripe olives
1 teaspoon salt
¼ teaspoon black pepper -- ground
14-16 ounces penne pasta

Preparing the Dish

Cook pasta as directed on package. Cook ground beef, onion, and garlic until beef is light brown. Add zucchini, Marinara sauce, olives, salt, and pepper. Simmer until zucchini is crisp tender. It's easy to overcook the zucchini, so be careful. Serve pasta with zucchini sauce. Garnish with Parmesan cheese.
