Steak and No Kidney Pie

This recipe is based on British steak and kidney pie, but leaves the kidney out, since many people don't care for kidney and it can be difficult to find in your grocery store. I have also updated the recipe by adding some vegetables to it.

To prepare this dish, you first need to cook a chuck roast in a flavorful way, and get about 2½ cups of broth and drippings from it. To do this, make Crock Pot Chuck Roast.

Ingredients for the Crock Pot Chuck Roast

2 lb chuck roast
1 packet ranch salad dressing mix
1 packet Au Jus gravy mix
1 stick of butter
3 to 5 Jalapeño peppers

Ingredients for the Pie

Roast and drippings from Crock Pot Chuck Roast.
1/3 cup (5 1/3 Tbl) butter
1/3 cup all purpose flour
1/3 cup onion, chopped
1 stick celery, chopped
1 package (10 oz) frozen peas and carrots (or mixed vegetables)
1 uncooked deep dish pie crust (bottom and top)
1 egg beaten

Preparing the Dish

  1. Prepare the roast as directed here: Crock Pot Chuck Roast.
  2. Remove your roast from the crock pot to a cutting board to cool, and reserve all the broth and drippings from the crock pot. You need about 2½ cups of liquid, if there isn't enough, add milk or white wine to make 2½ cups.
  3. Cut the entire roast into ½ inch cubes (medium dice) and set aside.
  4. Preheat your oven to 400°F.
  5. You can make the Best Pie Crust Ever, or use pre-made pie crusts. Either will work.
  6. In a large pan, heat the 1/3 cup butter over low heat until melted. Blend in the flour, onion, and celery. Cook until the onion is translucent and the mixture is smooth and bubbly. Remove from heat.
  7. Stir broth and drippings into the mixture, return to heat and bring to a boil, stirring constantly. Lower heat to a simmer and let simmer about a minute, until the mixture has thickened. Remove from heat.
  8. Stir in the cubed cooked roast and frozen vegetables.
  9. Pour mixture into unbaked deep dish pie crust. Add top crust and crimp around edges.
  10. Brush the pie crust with the beaten egg.
  11. Bake in 400° F oven for 30 minutes, or until the crust is golden brown. The jalapeños can be used as a garnish.
